There is something special with a mojito. It has character, yet is very fresh and light. And if there are mint leaves involved, I'm sold. Just like I did a twist on a classic last time, with the Cloudy Apple G&T, I'm now doing a twist on another classic - the beloved mojito. But we were out of rum so I opted for vodka. But, next time I'm using rum!
INGREDIENTS: serving 2
- 4 cl of fresh lime juice
- 8 cl vodka
- fresh mint leaves
- 2 passion fruits
- passion fruit juice
Cut the passion fruits in half and scoop out one half and put it in the glass, and save the other half to use as decoration. Massage the mint leaves in between you palms to release the flavours. Add all ingredients in a big jug with tonnes of ice. Stir until all ingredients are blended and the liquid is ice cold. Pour into glasses and add your other passion fruit half as decoration.
